Orange Poppyseed Muffins

Bursting with citrus flavor and the delightful crunch of poppyseeds, these muffins are sure to bring people together.  Simple and easy for sharing with friends or family.

 

Ingredients:

  • 2 cups all-purpose flour

  • 3/4 cup granulated sugar

  • 2 tablespoons poppy seeds

  • 2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • Zest of 2 oranges

  • 1/2 cup unsalted butter, melted

  • 2/3 cup freshly squeezed orange juice (from about 3 oranges)

  • 2 large eggs

  • 1 teaspoon vanilla extract

 

Instructions:

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease the muffin cups.

  2. In a large mixing bowl, whisk together the flour, sugar, poppy seeds, baking powder, baking soda, salt, and orange zest.

  3. In another bowl, whisk together the melted butter, freshly squeezed orange juice, eggs, and vanilla extract.

  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.

  5. Fill each muffin cup about 2/3 full with the muffin batter.

  6. Bake in the preheated oven for approximately 15-18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

  7. Remove the muffins from the oven and allow them to cool in the muffin tin for a few minutes.

  8. Transfer the muffins to a wire rack to cool completely before serving.
