That tradition is carried on in the Texas Funeral Cake, a sheet cake, which is big enough for a potluck table and thus a great cake for a funeral or book club. This gooey cake is deceptively and dangerously easy to make. Starting with a box cake mix makes this cake not only easier but also less expensive. Ingredients: For the Cake: 1 box (15.25 oz) chocolate cake mix (plus the ingredients listed on the box, typically eggs, oil, and water) 1/2 cup unsalted butter 1/4 cup unsweetened cocoa powder For the Icing: 1/2 cup unsalted butter 1/4 cup unsweetened cocoa powder 1/3 cup buttermilk 4 cups powdered sugar 1 teaspoon vanilla extract 1 cup chopped pecans (optional) Instructions: Prepare the chocolate cake mix according to the instructions on the box. This usually involves mixing the cake mix with eggs, oil, and water. Follow the specific measurements and directions on the box. Once the cake batter is prepared, pour it into a greased 13x9-inch baking pan. In a saucepan, melt 1/2 cup of butter. Stir in 1/4 cup of cocoa powder.
