Texas Funeral Cake
Funeral cakes have a long tradition. Starting in Europe, cakes were often given to the bereaved as a comfort. That tradition is carried on in the Texas Funeral Cake, a sheet cake, which is big enough for a potluck table and thus a great cake for a funeral or book club. This gooey cake is deceptively and dangerously easy to make. Starting with a box cake mix makes this cake not only easier but also less expensive.
Ingredients:
For the Cake:

1 box (15.25 oz) chocolate cake mix (plus the ingredients listed on the box, typically eggs, oil, and water)

1/2 cup unsalted butter

1/4 cup unsweetened cocoa powder
For the Icing:

1/2 cup unsalted butter

1/4 cup unsweetened cocoa powder

1/3 cup buttermilk

4 cups powdered sugar

1 teaspoon vanilla extract

1 cup chopped pecans (optional)
Instructions:

Prepare the chocolate cake mix according to the instructions on the box. This usually involves mixing the cake mix with eggs, oil, and water. Follow the specific measurements and directions on the box.

Once the cake batter is prepared, pour it into a greased 13x9-inch baking pan.

In a saucepan, melt 1/2 cup of butter. Stir in 1/4 cup of cocoa powder. Bring the mixture to a boil, then remove it from heat.

Pour the hot cocoa mixture over the cake batter in the pan. Do not stir; just let it sit on top.

Bake the cake in a preheated oven according to the box instructions for the cake mix. This is typically around 25-30 minutes at 350°F (175°C) or as indicated on the box, but check for doneness using a toothpick inserted into the center.

While the cake is baking, prepare the icing. In a saucepan, melt 1/2 cup of butter. Stir in 1/4 cup of cocoa powder and 1/3 cup of buttermilk. Bring to a boil, then remove from heat.

Gradually whisk in the powdered sugar and vanilla extract until the icing is smooth and well combined.

If desired, stir in the chopped pecans.

As soon as the cake comes out of the oven and while it's still hot, pour the warm icing over the top. Spread it evenly.

Allow the cake to cool and the icing to set before cutting and serving.
